Perfect Pairings – Clam Pizza and Cantillon St-Gilloise – Music in Your Mouth

In addition to boasting a smidgen of American history, Washington DC is also home to numerous, wonderful craft beer establishments. On our recent visit to the nations Capital we were able to stop at several of these and take a tour of DC Brau (look for a post soon). One of these stops, the Dupont Circle location of Pizzeria Paradisio, was a wonder of grain and taste. Paradiso is a small, local chain of wood fire pizzerias which each also house what they term a Birreria Paradiso. As such the locations stock a wide variety of beers both on tap and in bottle (Evil Twin, Loverbeer, Allagash) as well as a menu of creative wood fired pizzas and accompaniments. The pizzas range from a classic margherita to the Bottarga (Paradiso Tomato, Minced Garlic, Parsley, Parmesan, Egg, Bottarga).
