Beer Pairings – Dubliner Irish Cheddar with Stout & Fourme d’Ambert (aged over 60 days) paired with Blind Bat Brewery Long Island Potato Stout & Sixpoint Brewery 3Beans

As you may have recently read, we here at Beer Loves Company cooked up a meal (detailing the experience and providing the recipe) here on our website. With only one cup (8 oz.) of beer required to make our stout stew and our chosen beer, Blind Bat Brewery Long Island Potato Stout, coming in 16.9 oz. bottles we had some left over. What better way to enjoy these “leftovers” than with some tasty cheese? Since the our stew, while not a difficult recipe, does take some time to cook you’ll definitely want to enjoy a snack and a beer while it simmers away. In the spirit of St. Patricks Day week, we selected a Dubliner Irish Cheddar made with Irish Stout and also a Fourme d’Ambert (aged over 60 days) to pair with the beers we would be pouring. Speaking of those beers, in addition to the Blind Bat Stout we also opened a can of the limited release 3Beans by Sixpoint Brewery which was a collaborative effort between Sixpoint, Stumptown Coffee Roasters & Mast Brothers Chocolate. Irelandia (Ireland + India) – Curried Cabbage & Pairings

Saint Patrick’s Day is almost upon us and here at BLC that means cooking up something delicious (and maybe wearing a little green as well). Since no doubt we will soon be hearing the (let’s be honest, sometimes blaring) tones of bagpipes in the air it seemed like we should prepare something to honor this holiday from the Emerald Isle. It seems no Irish inspired meal is complete without cabbage, so in addition to our Blind Bat Stout Stew, we also cooked up a curried cabbage side dish. You may be asking, “Is this another recipe with a twist?” Yes, yes we did decide to add a twist to our cabbage. While we think corned beef and cabbage is a fine choice for your St. Pat’s celebration we wanted to try two recipes that were a bit different and offered some more depth of flavor to pair with the beers we would be enjoying. This side dish was savored with our stout stew, but it would make a suitable side dish for just about any St. Patty’s Day meal. From Ireland to Long Island – Blind Bat Stout Stew & Pairings

Saint Patrick’s Day is right around the corner (it’s tomorrow for those who may not know). With that in mind we here at BLC were thinking how best to celebrate the festivities. During our recent interview with The Beer Amigos (Episode 12 is the one with our interview as well as more from the recent Spring Craft Beer Fest) we talked a bit about writing recipes and developing pairings for beer and food. This crept into our minds while running a couple errands and we decided to celebrate by making a “Guinness Stew”. We changed around the ingredients and recipe to make it our own. Instead of the traditional Irish dry stout, we decided to go with local favorite and use Blind Bat Brewery’s Long Island Potato Stout.
